I’ve been a vegetarian for more than 6 years now and, when people find out, they ask A LOT of questions:
“How do you do it?”
“Was it hard giving up meat?”
“What do you eat?”
But my favourite question always comes after a satisfying meal with friends, when someone turns to me and says, “Can I have this recipe?”.
“Of course!”, I respond immediately.
But then life happens. There’s work and ministry and shopping and laundry and cleaning and dinners and sick kids and…
And then I forget to send the email.
Enter the Black Bean Bandit. This blog is my poor attempt to share tips, tricks, and tried-and-true recipes with everyone and anyone who cares to listen. Whether you’re a friend, a veteran vegetarian, or someone looking to save some money on groceries, my hope is that you will be encouraged by the simple recipes and suggestions found here and that your resulting meals will satisfy even your most difficult critics. I do my best to make easy, delicious recipes that use real ingredients you could find at most grocery stores. In my books, if I can get both meat-lovers and toddlers to finish (and enjoy) a vegetarian meal, that’s a win!
